how to make RED VELVET CAKE IN PRESSURE COOKER

Ingredients:
1 cup plus 1/4 cup flour (155 grams)
1 tbsp. cocoa powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup sugar (150 grams)
1/4 cup, 1/2 stick, 56 grams unsalted butter (room temperature)
1/2 cup oil (110 grams)
1 egg
1 tsp vanilla extract
1 tsp vinegar
1-2 tbsp. red food color
1/2 cup buttermilk or regular milk
Method:
1.Remove weight and filter from the lid of pressure cooker.
2.Place the pressure cooker on stove top, add 1 cup of salt, place some steel bowl or heat proof pot, cover and preheat on medium flame for 5 minutes. Then turn the flame on low.
3.Make buttermilk, combine 1/2 cup of milk and 1/2 tbsp. vinegar, stir and set a side for 15 minutes. After 15 minutes add 1-2 tbsp. of red food color and mix. We will use this in the end.
4.Sift together, flour, cocoa, baking soda and salt. Mix well and set this aside.
5.Beat sugar and butter to combine.
6.Add egg and beat again to mix it well.
7.Add oil, vanilla and vinegar. Beat until combine.
8.Now start adding dry ingredients alternatively with buttermilk mixture in three batches. Beat till everything is smooth.
9.Pour this mixture into a pregreased and lined, 8 inch baking pan. Tap to remove air bubbles.
10.Bake in pressure cooker for 40-50 minutes on medium low flame. Check in between, increase flame a little bit if cake is not baking.
11.Remove from pressure cooker and let it cool completely........
